該裝置通過勺子的刮挖動作測量奶油或霜淇淋等可自我支撐的樣品、以刮勺動作進行之阻力，測量樣品的平均硬度(Aveage Hardness)、延展性（Extensibility）等參數。

This rig is used to measure the scooping resistance of ice cream, and other similar samples which can be formed into a selfsupporting block. A tilt-table is mounted on to the base of the Texture Analyser and the scoop positioned onto the load cell.
