A/MHTR 韌性試驗裝置
包含兩個安裝在儀器操作臺的活動斜角樣品放置盤、一條金屬絲切線；透過切線剪切時的受力狀況進行樣品質地的表徵，適用於麵包、蛋糕或其它產品的堅實度（Firmness）、韌性（Toughness）或發酵的拔絲特性。

This rig has been developed in conjunctionwith Prof. Hoseney and Dr. Miller of theKansas State University. It is used todetermine the toughness and firmness ofbread and other sliceable products.The rig comprises two adjustableangled base plates which fix on the textureanalyser and a support frame, holding astainless steel cutting wire, which connectsdirectly to the loadcell. The force to cutthrough the sample is measured.
